How to Cook Porridge yam In Nigeria

Porridge yam is one of the foods eaten in Nigeria, it is eaten at home and sold in most Nigerian restaurants, porridge yam is one of the easiest to cook among all Nigerian foods, the ingredients includes: yam, pepper, tomatoes, vegetable(optional), red oil(optional), crayfish and maggi(seasoning).

Peel off the back of yam and slice into serve-able bit, wash and set aside. blend about 8 ball of medium sized tomatoes,

add 1 smallest size of tin tomatoes(to get the reddish color) and fry. put your pot on fire, allow to dry, add about 3 to 4 cooking

then add about two to three cups of water(for a medium sized yam) drop the already washed yam inside, make sure the water does not completely cover the yam. add ground crayfish and pepper, add 1 or two cubes of maggi(seasoning), stir and add salt to taste. cook for another 15 to 20 minutes(you can use a table knife to check when it is done), add vegetable(optional) and serve with a chilled bottle of coke.

What is African Breadfruit (Ukwa)

Afrcan breadfruit comes from a particular tree in Africa, breadfruit is one of the foods eaten in Nigeria by the Igbos and some people from the western part of the country. The botanical name is treculia africana. the seed is simply shelled, washed and cooked with (akanwu) and water till it is soft enough for consumption. And it is eaten like that by the Igbos.
